주방에서 조리 시 발생되는 오염물질은 CO, CO2 등과 같이 연소가스의 연소과정에서 발생할 수 있는 물질과, 조리방법에 따라 발생되는 미세먼지 (PM10, PM2.5), 휘발성유기화합물 (benzene 등), 카보닐화합물(formaldehyde 등), 다환방향족탄화수소류 (anthracene 등), 초미세입자(1 μm 이하) 등이 있다. TVOC, Benzene은 발암 물질이 포함되어 있을 뿐 아니라, 악취의 주된 원인으로 작용한다.
